Melon-Bean Succotash
1 cup snap peas, cut into slices
1/4 cup each black, kidney, and white beans
1/2 cup onion sautéed
1/2 cantalope, cut into small pieces
2 tbsp. honey
Mix cooked beans with raw snap peas, onion, honey, and cantaloupe. Serve as a raw summer salad.
